3 WW point Chicken Orzo Soup

The perfect way to fill up! Chicken and vegetables are slow cooked to perfection. It so savory and delicious! Also easy AF!

3 Point Chicken Orzo Soup

Ingredients

  • 6 cups of low sodium chicken broth
  • 3 uncooked carrots sliced (like a dime) or you can use frozen
  • 1 tsp salt (or to taste)
  • 3 chicken breasts or chicken thighs (the thighs make it slightly higher in points but it's my favorite)
  • 1 whole lemon, juiced
  • 2 tbsp of dried dill
  • Fresh Thyme stalk
  • 1 cup of orzo (uncooked)
  • fresh or frozen peas and corn
  • 1 white onion, chopped
  • 1 celery stalk, chopped
  • 2 cloves of garlic

Instructions

Add onion thinly chopped, garlic, salt, pepper, thyme stalk (you’ll remove that later) chicken breasts or thighs with chicken broth to crock pot.

Cook on high for 4 hours.

Take chicken out and shred with a fork. Place back into the crock pot, add in orzo, frozen peas, corn, and dill. Squeeze juice of a lemon (make sure to take out seeds)!

Let cook on low for another 3 hours.

Remove stalk of thyme and serve!

Notes
