The perfect way to fill up! Chicken and vegetables are slow cooked to perfection. It so savory and delicious! Also easy AF!
3 Point Chicken Orzo SoupPrint This
- 6 cups of low sodium chicken broth
- 3 uncooked carrots sliced (like a dime) or you can use frozen
- 1 tsp salt (or to taste)
- 3 chicken breasts or chicken thighs (the thighs make it slightly higher in points but it's my favorite)
- 1 whole lemon, juiced
- 2 tbsp of dried dill
- Fresh Thyme stalk
- 1 cup of orzo (uncooked)
- fresh or frozen peas and corn
- 1 white onion, chopped
- 1 celery stalk, chopped
- 2 cloves of garlic
Add onion thinly chopped, garlic, salt, pepper, thyme stalk (you’ll remove that later) chicken breasts or thighs with chicken broth to crock pot.
Cook on high for 4 hours.
Take chicken out and shred with a fork. Place back into the crock pot, add in orzo, frozen peas, corn, and dill. Squeeze juice of a lemon (make sure to take out seeds)!
Let cook on low for another 3 hours.
Remove stalk of thyme and serve!
