Scallops, Penne, and Arugula sprinkled with ParmesanPrint This
- Scallops (I had about 12 medium size)
- 1/2 cup capers (drained)
- 1/2 lemon juice
- 1 TBSP Olive Oil (you can add more)
- 1 TBSP Minced Garlic
- 2 Cups Arugula
- 1 Cup Penne Pasta
- 1 TBSP Parmesan Cheese
Pat scallops dry, drizzle with salt and let sit for 10 minutes.
Heat olive oil and garlic in pan.
Add scallops on medium until they turn white. Squeeze half a lemon and add capers. Stir scallops after 4 minutes and cook until golden on both sizes (they shrink in size a bit). Add in cooked penne and arugula and stir to coat. Sprinkle on Parm cheese and pepper and serve! I counted 5 points for half the pan!!
