Balsamic Chicken and Veggies

This is was so incredibly easy to make and delicious!

What you need:
Chicken Breast
Balsamic Vinegar
Chicken Broth Low sodium
Baby Potatoes
Olive oil (I used truffle)

I literally just threw the chicken with a slash of chicken broth, 2 tbsp of balsamic vinegar, a sprig of rosemary and garlic in a plastic bag and marinated all day.

I preheated the oven to 400. Chopped the carrots into strips (like fries) and halved the baby potatoes. I took a TBSP of truffle olive oil and mixed them on a baking sheet. Added salt and pepper. These take about 35 mins to get nice and soft.

Put the chicken in the same oven after the veggies were baking for 20 mins and cooked both for about 20-25mins (depends on how big your breasts are) until cooked through.

So easy, low points and delicious!

I counted as 4 points for the entire serving!
