Shaved Brussel Sprouts
Pickled Red Onion
- Sautee brussels in olive oil and taco seasoning until soft.
- In a food processor add 1/4 cup cashews, 1 garlic clove, 1 cup or parsley of cilantro, juice of 2 limes, and 1/4 cup of water. Blend until smooth. You could add a little greek yogurt to thicken it.
- In a sperate sauce pan sautée corn and jalapeño. Once that is soft add it to Brussel mixture and stir.
- Serve is a taco shell and top with sauce and pickled red onion.
