Easy Light Scallop Salad

Last nights dinner was simple and DELICIOUS! 1 @ww point scallops with a 2 @ww point salad! .

Scallops: I laid them out to dry for 10 mins before cooking.

In a small bowl I mixed 1 TBSP of olive oil, juice of a squeezed lemon, Salt and pepper then whisked together.

Then poured over the scallops and cooked on medium heat until golden brown on both sides! You could totally do this is the air fryer! 

Salad is mixed greens with onion, tomato, Parmesan cheese, and the drizzle of Trader Joe’s Orange Muscat Champagne Vinegar!
